Trilogy Coffee Roasting Co. has outgrown its modest digs in DaVinci Design Studios at 117 W. Howry Ave. in Deland. So the specialty-coffee maker, owned by married couple and business partners Clay and Michelle Cass, will be moving into a larger space around the corner, part of a former garage building at 123 S. Florida Ave.
Trilogy Coffee will be moving from about 100 square feet (with shared access to other parts of the ground floor) to a vacant space of about 1,100 square feet.
“We’re going to do a full build-out,” Clay Cass said in an interview this week. “We’ll put on a fresh coat of paint, and add exterior lighting that’s the same as the lighting at Persimmon Hollow and the Artisan Alley Garage.”
The couple are getting some help from the Downtown DeLand Community Redevelopment Agency, which approved a total of nearly $8,000 in grants to help defray the $40,000-plus cost of the renovation, including installing new electrical wiring and light fixtures, and other interior and exterior renovations.
Clay Cass is hoping to start the renovations by mid-February and be finished by the end of April.
“We’re hoping to have a grand opening in May, a year after our opening here in DaVinci Design Studios,” he said.
The new space will allow for Trilogy to expand its retail and wholesale operations, and create a beautiful environment conducive to “studying, gathering and engaging,” Clay Cass said.
In the new location, Trilogy will also be open longer hours, he said.
Cass plans to offer events such as movies or live music.
“I’m really passionate about film,” he said. “I want to provide an environment where we can have films and dialogues. I’d like to contribute to the community environment that way.”
Trilogy Coffee Roasting Co. provides small-batch roasts of specialty coffee to aficionados who want ethically sourced coffee with few additions. Many of the coffees are organic and rain-forest-certified, according to the company’s website.
The website notes that Trilogy has a full menu of manually brewed coffee and espresso-based drinks.
The company’s name reflects the three “stories” that arise in producing a great coffee experience: a description of the beautiful regions, farms, people and cultures that produce the coffees; the craft of roasting and brewing coffee to the highest standards possible; and the customer’s enjoyment of the sight, smell and taste of Trilogy’s coffees.
